The Best Veggies Burgers on the Planet by Joni Marie Newman has become a lifesaver in many regards. Even though I love cooking, summers have always presented a bit of a challenge for me as a plant based cook- at least for picnics and family get-togethers. Over the summer I made several recipes from this book and I have to say that I have enjoyed all of them. The recipes are easy to follow and the variations in style and flavor are numerous. And I have something juicy to throw on the grill along with my family and friends.
The Pizza Burgers are a family favorite and it is definitely worth the time and energy to make the recommended flat bread and pesto to go along with it. I also enjoy melting a bit of Daiya mozzarella on top.
Pictured above is the Ortega Burger. I made these last night served with extra salsa, avocado, tomatoes and onions and they were enjoyed by all. I am hosting several international guests right now, 3 of whom are not accustomed to a plant-based diet. These burgers received a big thumbs up – yeah!
Another favorite is the Potato Samosa Burger which I served with Spicy Tomato Achaar from Robin Robertson’s newest book, Quick-Fix Vegan. Achaar is basically another word for condiment. This one is inspired by the cuisine of Nepal. I need to check with Robin first, but I will hopefully be sharing this recipe and it’s many uses in one of my upcoming posts. It is super easy to put together and I swear it would make even cardboard taste good so be sure to check in for that one.
In the meantime head on over to amazon and check out both of these wonderful books. They are both great additions to any kitchen.
Oh – and just because summer is over doesn’t mean I’m throwing my Veggie Burgers to the curb – these can be enjoyed all year long.
